  • pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 2 teaspoons chopped fresh parsley
  • 1 teaspoon lemon zest
  • Roasted Garlic Whipped Potatoes
  • 1 pound Yukon Gold potatoes peeled and cubed
  • 1 tablespoon olive oil
  • 6 cloves garlic
  • 1 tablespoon unsalted butter
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon milk
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped chives
  • Charred Lemon Green Beans
  • 12 ounces fresh green beans
  • 1 teaspoon olive oil
  • ¼ teaspoon black pepper
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh lemon juice
  • Browned Shallot Pan Sauce
  • 1 tablespoon unsalted butter
  • 1 medium shallot finely minced
  • ½ cup unsalted chicken broth
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon chopped fresh parsley
  • Freshly ground black pepper

Instructions
 

  • Preheat the oven to 425°F.
  • Wrap the 6 cloves garlic in foil with a drizzle of olive oil and place on one side of a baking sheet. Toss the 1 pound Yukon Gold potatoes with 1 tablespoon olive oil and ¼ teaspoon black pepper, then spread onto the remaining baking sheet. Roast for 25 minutes (timer), turning once halfway through. until the potatoes are deeply golden and the garlic is soft.
  • Transfer the potatoes to a bowl and mash with the roasted garlic, 1 tablespoon unsalted butter, 2 tablespoons plain Greek yogurt, 1 tablespoon milk, ¼ teaspoon black pepper, and 1 tablespoon chopped chives until smooth and creamy. Cover and keep warm.
  • Prepare & Cook the Chicken
  • While the potatoes roast, pound the 1½ pounds boneless skinless chicken breasts to an even thickness. Brush with 1 tablespoon olive oil, then season both sides with ¼ teaspoon kosher salt, ½ teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon chopped fresh thyme, 1 teaspoon chopped fresh rosemary, 2 teaspoons chopped fresh parsley, and 1 teaspoon lemon zest.
  • Heat a large skillet over medium-high heat and cook the chicken for 5–6 minutes per side (timer), or until the internal temperature reaches 165°F. Transfer to a plate and let rest for 5 minutes (timer). Reserve the skillet for the sauce.
  • Char the Green Beans
  • Add 1 teaspoon olive oil to the same skillet and cook the 12 ounces fresh green beans for 5–6 minutes (timer), stirring occasionally until lightly blistered. Finish with 1 teaspoon lemon zest, 1 teaspoon fresh lemon juice, and ¼ teaspoon black pepper.
  • Make the Browned Shallot Pan Sauce
  • Reduce the heat to medium. Melt 1 tablespoon unsalted butter until it begins to brown lightly. Add the minced 1 medium shallot and cook for 2 minutes until softened.
  • Whisk in ½ cup unsalted chicken broth, 1 teaspoon Dijon mustard, and 1 teaspoon fresh lemon juice. Simmer 3–4 minutes (timer) until the sauce lightly coats the back of a spoon., then stir in 1 teaspoon chopped fresh parsley and a few grinds of black pepper.
  • Spread the roasted garlic whipped potatoes onto each plate. Slice the chicken and arrange over the potatoes. Spoon the browned shallot pan sauce over the chicken and serve alongside the charred lemon green beans. Finish with a squeeze of fresh lemon, chopped parsley, and freshly cracked black pepper.
