Smoky Paprika Chicken with Basil Street Corn

Ingredients

  • 1/2 lb chicken breast skinless, halved
  • 1/2 tsp paprika
  • 2 tbsp ranch dressing
  • 2 tbsp sour cream
  • 1.5 tbsp olive oil divided
  • 2 ears corn
  • 1 tbsp basil fresh, chopped
  • 1/4 tsp pepper divided
  • 1/8 tsp salt divided
  • 2 roma tomato cut in wedges
  • 1/2 english cucumber cut in half moons

Instructions
 

  • Heat 1/2 tbsp olive oil in an extra large frying pan to medium-high heat
  • pound 1/2 lb chicken breast to an even thickness with a meat mallet
  • rub chicken with 1/2 tsp paprika, cook 5-7 minutes (timer) per side or until done. Remove from pan
  • Combine 2 tbsp ranch dressing with 2 tbsp sour cream, set aside
  • Use 1 tbsp olive oil to coat 2 ears corn then sprinkle the 1 tbsp basil over ears sprinkle with 1/8 tsp pepper and place hot pan used for chicken over med high heat. Cook 8-12 minutes (timer) turning occasionally
  • Toss together 1/2 english cucumber and 2 roma tomato, drizzel on 1/2 tbsp olive oil, pepper and salt
  • Plate chicken with corn and vegetable salad on the side with the ranch sauce with the chicken

Notes

Chef's Tip
Fresh basil is added at the end to preserve its bright flavor. If using dried basil, reduce the amount by two-thirds.
