Ingredients

  • 1 lb pork tenderloin thinly sliced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper ground, divided
  • 2 tbsp olive oil divided
  • 8 loven carb contol tortillas 12 carbs and 100 mg sodium each
  • 1 cup lettuce shredded
  • 1 cup cherry tomatoes divided diced and halved
  • 1/2 cup red onion diced, divided
  • 1/4 cup cheddar cheese shredded
  • 1/8 cup cilantro Fresh chopped (for garnish)
  • 2 Lime wedges for serving, 1 TBSP lime juice
  • 1 cup corn kernels cooked, fresh or frozen
  • 1 avocado diced

Instructions
 

  • Prepare the Pork:
  • In a bowl, combine smoked paprika, ground cumin, garlic powder, chili powder, salt, and black pepper. Toss the sliced pork tenderloin in the spice mixture until well coated.
  • Cook the Pork:
  • Heat olive oil in a large skillet over medium-high heat. Add the seasoned pork slices and cook for about 5-7 minutes, or until the pork is cooked through and slightly crispy around the edges. Remove from heat.
  • Prepare the Tortillas:
  • Warm the soft tortillas in a dry skillet over medium heat for about 1 minute per side, until soft and pliable.
  • Assemble the Tacos:
  • Divide the cooked pork evenly among the warm tortillas. Top each taco with shredded lettuce, diced tomatoes, red onion, and shredded cheddar cheese. Garnish with fresh cilantro and a squeeze of lime juice.
  • Make the Avocado Corn Salad:
  • In a large bowl, combine the cooked corn kernels, diced avocado, cherry tomatoes, and red onion.
